I use Jira (free, 'cause I'm skint) to create team-managed projects. But I'd really like to stop making individual projects with tasks and subtasks only - and really make use of Epics. Only this Issue isn't available to me it seems. Can anyone on here guide me as to which template I should choose?
Hello @Caro Rayner
Welcome to the Atlassian community.
For future reference, questions about the Jira product should be posted in the Jira Questions forum, not the Community Contests & Kudos forum.
What type of projects are you creating? Go to the View All Projects page under the Projects menu. Find your project in the list. What does it say in the Type column?
I think you might find that it says "Team-managed business". Some of the Business/Work Management project templates don't include the Epic issue type by default, but you can add it.
Go to Project Settings and click on Issue types. The list of available issue types will show below that.
If you don't see Epic at the top of the list then click on +Add issue type. That will open a dialog where you can elect to add a new issue type of type Epic.

Found the feature! Thanks for pointing it out :) I often work on campaign projects that require multiple milestones. Epics work great for this kind of work.
Noted on the place to ask questions ;)

Dear Caro Rayner,
if you work on software development projects, you can choose the Scrum template and you will find that Epics can be initialised on the project's Timeline page.
Best,
LC

Thanks, @A L Chelli - but my proj set-up usually isn't for software releases, so the default issue types don't include bugs, Epics or user stories.
