How do I export all workflows and workflow schemes from JIRA

Hi Vittal,

You can easily export workflows, however, you can't easily export the workflow scheme.  A third party add-on that may help you accomplish this is Project Configurator for JIRA.

In regards to exporting workflows, you can use the information in Sharing your workflow to export your workflow.  Another option if you would like to get all the data from one instance to another is to create an XML backup and restore it to the other instance.
