I found this article on j-tricks, but I don't seem to be able to map what I need to do into Jira.
And, as a follow-up, if an admin doesn't "like" the description update, is there a way to revert the field to the previous entry?

You can not control the update availability for one field in Jira out of the box. Workflow properties have affect on all fields in Jira.
An Administrator can revert the value of a field, if this Administrator has the Edit Issues permission for this project.
The first sentence doesn't answer "how to make it possible for the assignee to update the issue description." While it may be true that the security definitions are not so fine grained as to allow access to only one field, the answer doesn't say how to enable it for "all" or "many" of the issue properties.

Go to project settings -> permissions and grant the Edit Issues permissions to assignee. In this case assignee will be able to edit all fields in the issue.
