How do I restrict edit access for custom fields in Jira

Would like to restrict EDIT option for Custom fields "Plan start and end date" . How can i achieve it

You cannot set edit permissions on individual issues, but you can restrict access to edit fields by creating a Workflow Transition with an attached screen that presents those restricted fields for editing. This methodology is discussed in this post:
