How do I restrict edit permission on a field to a set of users?

I want to restrict editing of a field - "Triage Approval" to only a set of approves/or users. Others will need to see the status but cannot change it.

You can't natively. You will need to install a 3rd party App in order to do this. The good news is that you have a few to choose from in Marketplace.
