How do I select JIRA Fields which I want mapped.Eg. Comments Field and Status Field

This question is in reference to Atlassian Documentation: Importing data from Excel

During Import, I want to Map my CSV fields to JIRA Fields which are not mentioned in the Mapping, like Comments and Defect Status.

Is it possible

The import will only map to columns that exist in the csv file.  So add a column in your excel - then it will appear in the mapping section of the import wizard.
