For example I want certain fields to show on an Epic as opposed to a Bug Issue Type.

Are you working with a Company Managed project or a Team Managed project? It will say which it is at the bottom of the navigation pane on the left when you are viewing the project.
For Company Managed projects this would be managed through Field Configurations and Screens.
You would make sure first that the Field Configuration used for a given issue type includes the fields you want. You could also optionally remove from it the fields that you don't want available on that issue type. You associate the Field Configuration to an issue type in a Field Configuration Scheme. The Field Configuration Scheme is then associated with your project.

Next you would make a Screen that contains the fields you want for a given issue type.

Screens get associated to issue operations (Create Issue, Edit Issue, View Issue) in Screen Schemes.

You then associate those Screen Schemes to issue types in an Issue Type Screen Scheme.

And finally you associate that Issue Type Screen Scheme to the project where you want this to take effect.
If you are using a Team Managed project, it is simpler.
You navigate to Project Settings > Issues. Select an issue type. Then add/remove the fields you want for that type of issue.
