I created a workflow schema that changed the "Done" status to a "Resolved" status. Ever since this happened, the Resolution status is showing them as UnResolved. Each ticket is also missing a Resolved date stamp. I feel like there is a step that I'm missing in the system for it to connect a Resolved status to update the Resolution status to Done and then include the day it was marked as Resolved. Can you help? Thank you!

Technically, you don't. Resolution and Status are completely independent of each other, there's no relationship.
What we have to do is create our own relationship in the workflow - set a resolution on the transitions into end-status and clear it on the way back to open status.
Setting a resolution is done one of three ways:
The resolution date is automated, we don't need to think about it. It'll get set to the last time a resolution went from <empty> to <any value>
You need to either have a pop-up screen where the user can set the resolution or set it with a post function or automation in the transition to Resolved.
