I'm trying to get a list of Projects a user has access to. As an Org Admin I would assume this is something that is possible.
I can see some posts from back in 2018 referencing using different REST APIs, but that all feels like a lot of hard work.
Anything available?

There is no page that will list available projects for a specific user.
But as an organization admin you can use the "login as user" button to switch to a specific user and check the list of projects as that user.

It can sometimes be useful to troubleshoot access issues.
And at the issue level you have the permission helper which will display why a user can or can not access a specific issue/ project.

Not a major concern, but may need to some explaining as to why.

Yes they will get an email about it. So you might want to warn them up front.
It can be difficult to tell which projects a user can access indeed. I can see why this task is cumbersome.
It helps to simplify permission schemes and project roles.
If this is something you need to run regularly I would definitely look into the rest api.
