How is the move issues when completing a sprint moving to another sprint function supposed to work?

When selecting the option to complete a sprint I receive a prompt to move outstanding issues to either the backlog or another sprint. When I choose to move the issues to the next sprint, I noticed that the sprint field shows both tags from the previous sprint and the new sprint they've been assigned to. The system should remove the tag in the sprint field from the previous sprint and just show the tag for the new sprint it is assigned to.

This is working as it is supposed to.  I think you're misunderstanding what the sprint field is for (but that's no surprise as it's not really explained anywhere, and it's not intuitive either).

The sprint field holds all the sprints an issue has been in.  It is not "the current sprint", it's all of them, whether active or ended.

It has to do that, otherwise you can't do sprint reports.
