With the board displayed simply double click on the board name to start editing it.
Note that is you are using a Scrum board, you can do this only when there a not an currently Active sprints.
Perhaps it has to do with being in an active sprint? Because when I click on "Board" under the project sidebar, it displays the current sprint. The only place the Board name is visible is in the browser tab.

Correct. You need to wait until you complete the active sprint. Then the board name will show on the board and you will be able to edit it.

For a team-managed project, if you are project lead you should be able to just click on the name when viewing the board and edit the name.
