I have an account where I created a project and invited a member via email. After they accept the invite, I need to retrieve their email address—how can I do that? Also, in the profile visibility settings, it mentions an option "Only you and admins." Since I’m the one who gave access to the project and added the member, does that make me an admin? And what exactly does "admin" mean in this context?

Welcome to the Atlassian community.
You can see information a user's profile by navigating to the Teams menu and searching for the user. When they are returned, click on their name in the results to see the details of their profile. You should be able to see their email there if you have the required admin access.
There are different types of admin access, and you may not have the one that is required.
