How Can I change all my URL project field from all my project? Do I change them one by one?

Are you talking about a custom field type URL you created for your projects?

You cannot change the URL of the link to the project itself.

It has a syntax like https://<yoursite>.atlassian.net/browse/<PROJECTKEY>

You can search for issues where the URL field is not empty and bulk update the value if you have the Edit issues permission.
