I use Jira Cloud as a project management tool.
In the issue screen, I would like to show/hide field B depending on the selected value of field A, which is a selection list (single selection) type.
Is there any way to achieve this type of action?

Unfortunately out of the box this feature is not available.
you need a third party plugin such as devinity custom fields.

Not natively - what kind of field is (B) though? If you could give us more specifics about this scenario, we can advise further :)
If they're both select lists - you could use a Select List (cascading) - therefore changing the options of (B) depending on (A), if that would work?

The B field is a custom field of numeric type for entering project data.
I am currently planning to use Jira in a waterfall type development. I have the same issue type task set up for each process, so I am seeing fields that do not need to be entered for some processes.
The A field is a field to select the process set for each task. Depending on the process selected in the A field, I would like to hide some fields that do not need to be entered for that process.
Is there any way to achieve this?

Not natively in Jira.
You might be able to find an App on the Marketplace that can do this - or, there is an alternative using Jira Service Management
In JSM, you could use Forms:

^ It's not an ideal workaround, but it depends how necessary having those fields dynamically visible is!

I am not knowledgeable about Jira Service Management and did not know such a feature existed!
Since we have no plans to use JSM at this time, it will be difficult to realize this immediately, but we will consider it while looking for other applications.
