I'd like to create a bar chart with the x-axis representing the categories and the y-axis representing counts. However, for each category in the x-axis, I'd like to provide 5 bars for the amount of time a ticket required to be marked resolved (<1 day, 1-2 days, 3 days, 4 days, 5+ days).
Are there any gadgets which would enable this?
You could explore the eazyBI app.
It has a predefined dimension "Resolution interval" which creates members based on how many days it takes to resolve an issue in Jira.
Interval definition can be customized according to your requirement (<1 day, 1-2 days, 3 days, 4 days, 5+ days etc).
Then you select issues resolved and group issues by resolution intervals.
It would be possible to create custom names for these intervals to make more sense.

You could experiment with free trials of Marketplace apps like this one, or this one, or many others.
Maybe there's a free one that will fit your needs. If not, you'll have to evaluate your budget for your custom visualization needs.
Maybe someone else has needed to replicate your exact use-case for data presentation, and they can suggest a specific app.
