I would like to display on a dashboard a graph that represents the display the number of open tickets that existed on each day fir the last month. How can this best be achieved
The first thing I would do, would be to create a filter that brings back all your unresolved issues.
Once you have that, go to your dashboard and pull in the created vs resolved gadget.
When you are configuring the gadget, pick your filter and then make sure you select the dropdown that says "Display the Trend of Unresolved".
Once you save your dashboard, you should see a trend line that shows you how many open issues you had every day.

Jira does not provide a native report/gadget for that.

As already suggested, you could try the Created vs Resolved chart gadget of Jira configured to display the trend of unresolved. But keep in mind that this chart includes only the issues created in the timeframe configured in the gadget; it is not a cumulative chart, so the issues created before this timeframe will not be included - the chart always starts from 0!
If you need something more advanced and more accurate, you could also search on the Atlassian Marketplace for an app that provides this type of chart.
if you consider the idea of using a plugin, our Great Gadgets app offers a Cumulative Flow Diagram gadget that can display number of issues in each status, status category or board column.
It can be configured to display only the open issues ("To Do" and "In Progress", or only "To Do", etc).
The same app offers also a WIP Run Chart gadget that can display the total number of open issues on a daily basis, along with the trend-line.
