How to extract screens and fields in Jira?

If I correctly understand you want to export the Jira screens and the custom fields added to those to Excel, so that you can use Excel filtering on them.

While I don't think there is an out-of-the-box solution to this, you can develop a custom template for the Better Excel Exporter app. Basically, for any information available from the Jira Cloud REST API, you can use this app to send requests to the corresponding REST API endpoints and then insert the result to the Excel spreadsheets. In fact, among the default templates shipped with the app, you can find several examples of this technique!

Can you clarify what you mean by extract? Do you mean an Excel export?

Just in case it is Excel, you can do this from issue search:

1. Go to Filters (top navigation bar) > View all issues
2. Search for the issues you wish to export. I find it's easiest to do this from the "List View"
3. Set the Columns (i.e field data) you wish to export
4. Select Export issues, and choose the relevant export option needed

I would like to extract all Custom fields with Screens into excel. The reason is to filter the different Screens with Custom fields. Please assist. Thank you so much

Screens are just a collection of fields - you can't export screens. You can run a filter and then export the results to a CSV field.
