If I correctly understand you want to export the Jira screens and the custom fields added to those to Excel, so that you can use Excel filtering on them.
While I don't think there is an out-of-the-box solution to this, you can develop a custom template for the Better Excel Exporter app. Basically, for any information available from the Jira Cloud REST API, you can use this app to send requests to the corresponding REST API endpoints and then insert the result to the Excel spreadsheets. In fact, among the default templates shipped with the app, you can find several examples of this technique!

Screens are just a collection of fields - you can't export screens. You can run a filter and then export the results to a CSV field.
