I manage the jira instance for my org. I want to capture information of all projects in a particular sprint.
I have already used the sprint health gadget per board, I would like to know if there is an option to consolidate these boards as a single dashboard gadget.

You may want to explore an additional app for your Jira - eazyBI for Jira. It contains an option to analyze multiple sprints in one report.

Short answer: not with any out-of-the-box features
Longer answer:
For your question, I am assuming your teams' projects/boards each have their own sprints and that they are on the same timeframe cadence...and possibly the same naming convention...even though they are individual sprints by board.
What would that consolidated gadget look like in your use case:
I am unclear how #1 would be helpful, although it is possible to create a single roll-up board that showed all of the information with a combined filter. That still could not be shown in one "sprint health gadget". An alternative would be to look at a Cumulative Flow Diagram for a rollup of all projects, seeing issue counts rather than differing story points between teams.
For #2, there is no such built-in gadget to handle multiple projects. And with a dashboard limit of 20 gadgets, that's how many projects you could display at once.
There are certainly better gadgets/reporting for purchase on the Atlassian marketplace from vendors, so perhaps look there also. Before you do that, I recommend pausing to consider what problem are you trying to solve by doing this. That may help you know what to search for when comparing addon apps.
