I would like to ask a piece of advice - does anyone know how I can hide a status on the Jira Software Project board so that only particular team members could see issues in that status and other team members won't?
E.g., if an issue is on 'On Hold' status, only Member X sees issues on that status but member Y does not see them on the same board?

the correct answer might depend on the question, whether those issues should 'only be hidden in the board' (but still accessible in general) or 'be hidden in general',
If the issues could remain visible in general, configuring a slightly adjusted board like suggested by @Mohamed Benziane might do the trick.
IIf the focus is on 'within the same board' and the issues should be hidden in general, this lets me think of using issue-level-security (see https://confluence.atlassian.com/adminjiracloud/configuring-issue-level-security-776636711.html). However, you might need an additional workflow app (see https://marketplace.atlassian.com/search?category=Workflow&hosting=cloud) to actually update the issue security automatically when entering the status of interest.

You can't do this, but you can create a new board with this status and remove it from the previous board.
Then give access to the new board to a limited set of user
