I have a customer which have different issues organised in different EPIC.
Actually customer noticed that if he filter the issues by STATUS, they loos the epic hierarchy.
Is there a way that when you filter all your epics based on issue status, then it show still the EPIC level with inside only issue which has been filter on STATUS field ?

Try not to exclude the epics from the filter; exclude only the issues under those epics by their filtering by their status.
Adjust your filter with something like this:
OR issueType = Epic
so that the epics will always be displayed.

I forgot to mentionned that our customer is using the Time Tab of Team Manage project and this view seems to be not possible to handle filter with your suggestion.
Here is my Time line sample without filter
If I then click on the Filter menu and select from there Status In progress, then the EPIC hierachy gets removed. Then if I select also the EPIC item it does not work either
The idea from my screen shot is that if I select to filter on status = In progress, my time line should show :
TPA- 1 (Epic)
TPA -3
TPA -5
TPA- 2 (Epic)
TPA -11
Any idea how to accomplish this in Team Managed projet or it is not possible ?

Oh, I see. Indeed, the filtering capabilities in that List view are limited as it does not support JQL. Unfortunately I don't see a solution based on this view :(
An option would be to search for a plugin on Atlassian Marketplace, that provides such view. In case you consider this option and would be OK to have this info on a Jira dashboard, our Great Gadgets app offers two gadgets that could be helpful for you.
Pivot Table & Pot Chart gadget lets you visualize the issue from a JQL/filter by their hierarchy along with their fields. All you have to do is to configure the gadget with a filter that returns the issues without epics but to use the Parent Epic field in the table configuration.
Work Breakdown Structure (WBS) gadget let you visualize the issues from a filter, by their hierarchy along with their status. All you have to do is to configure the gadget with a filter that returns the issues along with their parent epics.

Currently Group-by in board 'Work Item'/'Issue' view doesn't support Group by 'Epic'.
You can do something as below:
1. Use timeline option - but that' won't have Status group by again.
2. Create a Filter having all those EPIC OR Story - based on conditions you have. Have a new Kanban board having Epic as swimlanes and status as lanes (could be good representation)
3. Create a Plan/Advanced Roadmap having all the group by options. (if you've).
4. [Plugins] JXL sheets can be a good option here.

The user wants a dynamic filter on status that he can change freely from the board, so the filter will not work
