I have searched and all instructions say to go to board config, then select Card Layout. I don't have Card Layout as an option so how do I modify the fields that display in the cards on my board?
This is what my left nav looks like for board:

Based on the options you say you have, you are working with a Team Managed project. You can confirm that by looking at the bottom of the navigation panel on the left when you are view the projects board or settings.
It is not possible to modify the fields that appear on a card for a Team Managed project at this time.

Hello. The term is "company" managed, not "customer" managed.
To make the conversion you would have to create a new Company Managed project of the same type, then move the issues from the current project to the new project.
Because the two project types provide different configuration management options, there can be data loss during such a conversion.
Additionally, Team Managed project configurations can be managed by the Project Administrator, where Company Managed project configurations for items like issue types, custom fields, and workflows can be managed only by full Jira Administrators.
