We're looking to manage multiple projects and track status, etc across multiple Kanban boards. We do not have the premium version of JIRA for Kanban, which I'm sure would help. Is there any way to do this with the tools that we currently have?

You should definitely try first the approach recommend by @Karan Sachdev, which is based on creating a new board that includes the issues from all the projects.
But if this is not enough, another option would be to search on Atlassian Marketplace for an app (plugin) that is able to do cross-project tracking.
If you consider the idea of using a plugin, our Great Gadgets app offers a set of gadgets that allows you to generate all kind of cross-project metrics and charts (burndown with forecast, velocity, throughput, CFD, flow metrics, cycle time, lead time, etc). In addition, it offers a Pivot Table & Pivot Chart gadget that allows tracking projects status by number of issues, sum of story points or percentage of work completion, etc
These gadgets are based on a filter; so you will just need to configure them with a filter/JQL that returns the issues from all projects that you want to track.

You can consider creating a separate board, and adjust its filter to include issues from multiple boards. This way you can view the issues from multiple projects on one board.
There are multiple ways to configure your filter. One of the ways is to run an issue search using the filters for your existing boards, and save this search as a new filter:
Now you can use this "Filter for Multiple projects" on your new board.
