In Jira Work Management we have a summary for single project. I am looking for a similar view that includes all projects. I don't need any other features besides just seeing the data well presented like the Summary tab does, but I want it to include all projects of the entire Organization. This is mainly so our Top manager can have a good idea of the overall progress of Issues and distribution of tasks.

There is not a pre-built summary that includes all projects.
You can work at building one of those yourself using the Jira Dashboard feature and the Gadgets that are available in the Dashboards.

There are a variety of third party apps that can add more gadgets to the the dashboards to enable additional views of the data.
Unfortunately this is a constant in Atlassian products.
You see that they have published a product designed to manage the company's various projects. (Not a single project). And the tool does not have, natively, at least one "useful" screen where projects are listed and that we can use JQL in it.
