How to structure SAP developments

for some years I work with Jira on software projects. Primary developments for Hybris and CloudCraze. Now we plan to move our SAP team to Jira as well.

I struggle a bit with a definition of overall structure and epics. Should it be more scope item drives, process-driven, projects might be hard (as many development are not coming from the project perspective).

Can you share any hints or your experiences on defining structures for SAP topics?
