In my project, when creating the ticket, the fields that remain empty get hidden.
How do I update the same fields later? Where are they located? If they are hidden, they cannot be updated anymore?

Your hidden fields usually are under the box More fields on your issue screen, as you can see in this example:
When you expand that section, you should be able to edit them.
In company managed projects you can (optionally) define different screens for creating / viewing / editing issues. If you are doing so, you should make sure the fields you want to edit are indeed on the edit issue screen in your project.

Please clarify; are the fields hidden in the field configuration or just no on the create screen?
If the latter, they will be on the edit screen when you edit the issue
