How would I construct an API call to get all tickets filtered by email via API in Postman. I am coming up blank on this. Apologies if it is simple and I'm missing it

Are you using this API https://developer.atlassian.com/cloud/jira/platform/rest/v3/api-group-issue-search/#api-rest-api-3-search-get ?

There isn't an option ine the JQL to filter issue by email. So if you're looking fot the email of the assignee or reporter you'll need to create a script in order to achieve this.
