In Excel I want to create a query that will run a SQL filter and download the full data from the query into and Excel spreadsheet that I can use as the datasource for a pivot table.
Can anyone point me in the right direction on what I need to know in order to make this happen?

You're most likely going to be looking at an add-on like Better Excel Plugin for Jira (XLSX/XLS) or Excel Automation Plugin for Jira (XLSX).
Other options may be the Bob Swift add-on. There are some good ideas in the Community post titled Fetch data from JIRA to excel as well so please take a look at that post for hints as well as reviewing the add-ons I mentioned to see if that does what you're looking to do.
