How can I look at an overview of how my team or I performed and carried out all the user stories in the sprints from the start of a proejct until the end. For example, I have a finished project which had five sprints in it, and now i'd like to have a review of performance across the five sprints, and see some feedback on overall story management, burn rates etc.

Doing reviews of what happened works best if you have data at hand. If you have run 5 sprints, you should be able to look at - in this case rather manageable - set of reports that help you get a view on how you did perform, out of the box.
On this overview page you can see a short description of these key reports and what you can use them for. They should be available right in the reports section of your team's scrum board.
On a side note: if you are running sprints, a key element in the framework is running retrospectives at the end of each sprint. The idea there is to look back at what you did, find areas to improve and determine actions continuously. If you run these after every sprint, take notes and determine actions, it will make the process of reviewing the project much easier. And on top of that, you will be able to improve during the project while it's still ongoing.

We use retrospectives already after each sprint, so that's fine, but I want to look at some reports of the overall proejct. Maybe I need to enable it somewhere but I just don't see how to access any project board reports or sprint reports. I just have Timeline, Backlog and Board, but no reports
