I have a Recruiting project. How can I edit the filters for this board?

I created a project for our hiring workflow (using the JIRA recruiting template). I have no idea what powers the "Due this week" button on top since the issues don't have a Due Date set by default.

I want to be able, but can't figure out how, to:

1. add other filters up top (for instance show issues that contain a specific label)
2. add a Due Date field to my issues since I want to see what candidates need actions next and by when
3. edit the filter that says "Due this week" to filter by the Due Date field, or possibly a custom Date field called "Next Action Date"

How can I achieve these?
