This really works on a company-managed project.  There, you have to create the bug status you want and add it to the bug-specific workflow.  Then associate that workflow to the bug issue type on the workflow scheme.

On the board, add the additional column and associate with the new status.

No.  Because the bug issue type is now on its own workflow, other issue types aren't affected.
