I want to set up my own jira server on my computer at home so i can practice administration skills. I have purchased a jira server licence and downloaded the software. Is there an "idiots guide" on how to then set up with a database etc. somewhere? On its own at the moment it seems somewhat volatile.

You don't need to purchase licence (although you can) for practicing on your local computer. You can get evaluation licence. Anyways. For database I suggest install Jira with built in database. It will be quick. Later you can switch to MySQL, Oracle or PostgreSQL if you want.

If you purchased a jira licensee, you are also entitled to as many "Development" licenses as you want. You can use a development license for your test instance. From my.atlassian.com there is an option to "view development license" for every license you have purchased.
And agree with the above, for your own test use, just use the embedded h2 database.
