You can define Excel report templates for Better Excel Exporter, which the app will fill with the most current data.

Report templates support formulas and functions, pivot tables, pivot charts, and all the Excel data analysis and visualization features.

You could retrieve data automaticcaly from jira based on filter and create you own stats in your file

Not OOTB. You can import issues from Excel (CSV format) into Jira. What exactly is your used case? Are you managing issues outside of Jira in excel that you want Jira to simply represent on some report?
