I am creating a roll out plan for a product, I have chosen the business project type as this seems better than the dev and software types. My only problem is that I want more categorising in the tasks menu. There only seems to be two levels of hierarchy in the timeline - tasks & sub tasks. I want more than this.
I have tried using epics but this does not work, they are definitely better in software projects.
Any ideas? Can I create a new task type at all, and configure the way it collapses and expands and holds tasks and sub tasks within it?

That is correct, Jira only has issue and sub-task (parent and child) layers in it (Jira Software treats Epics as a layer above issue)
You can't add more complexity to those levels without apps - Advanced Roadmaps and similar things add layers above Epic, but the only app that really lets you make it look like you've got other layers is Structure.

On the Marketplace, you will find apps that let you create desirable structure.
One of them is BigPicture/BigGantt, which allows you to you automatically generate a no-limited number of WBS levels. Task Structure can be created based on both build-in task attributes (e.g., Epic link, Component, Version, Sprint) as well as Jira links.
This flexible approach will let you adjust settings to perfectly match your specific business needs and result in more effective project management. Below find my illustrative image.
Once you activate structure builders, the system will use them to organize your tasks. The order of active builders corresponds to their business priority and can be adjusted.
