I do not believe it is possible to hide those fields.
It appears that in Atlassian's implementation of the Scrum board, those fields are helpful for the Epic to keep track of what work is (and is not yet) estimated, and so they are always presented. Those fields do not appear for the Kanban board version of the Epic Panel.
