Is it possible to add a new value to any Project Picker(single project) custom field?

As, this custom field has been made mandatory, hence I need to add a new value so that if any project is not be selected then I can select the new value added.

If there is any such functionality available, could anyone help me with that?

Actually, as per your description, the field has been made mandatory so the user must need to provide the value for this field otherwise it will not allow proceeding further.

Another thing is we don't have an option to set the default values for the searchable field..you can see this

Also, there is another field called version picker same as a project picker, for this as well we cant set default value.
