I would like to change the renderer of the systemfield Component(s) neither to be Autocomplete Renderer nor Select List Renderer but a  be a Single Select Renderer like for the Priority field. Is this possible and how can I achieve this?

No, you can't change the way system fields work without hacking the core code.
