Is it possible to consolidate multiple status

We have multiple workflows in our JIRA instance which make use of different status which ideally mean the same thing. Is it possible to consolidate or merge them?

Yes.   Edit each workflow, amending the "associated status" for each step to make it match the standards you want to use.

Once you've done that, I'd strongly recommend removing any unused status.

On the point of "I'd strongly recommend removing any unused status." - is there a overall clean up process we can run through? I.e. unused schemes, statuses, priorities, workflows, etc.?

Also is it possible to update an existing workflow that is active to update the associated status for this update?

If you look at the admin pages for each area, you'll see most divide the list into two - active and inactive.  It is a little boring to run through clicking on each, but you can safely delete every "inactive" item.
