i would like to understand if it Is it possible to edit a tickets description once it has been logged via JEMH.
we have users who have logged tickets and JEMH pulls the body as the description.
is it possible to manually go into each ticket and rectify the descriptions.

I am not sure that I fully understand your question, please correct me if I am misunderstanding.
JEMH will convert the email body to wiki format (if the email content was HTML) and then use this to populate the description of created issues.
You can browse to the issue and edit the description the same way as any other issue, is that what you are asking?
If there is content in the email that you would like JEMH to remove automatically, that is possible by configuring JEMH with some regular expressions to strip away unwanted content.
