You can but it is a bit time consuming as it has to be done in all transitions or every workflow you would like to have it available.

Depending on your installed apps, you could do it with Automation for Jira or as a itself status post-function

I'm the Product Manager of Elements Copy & Sync, which is an add-on that let's you do just that.
Basically what you can do is enable a Copy & Sync operation that would clone your issues only for a given project. It would be completely invisible in any other project.
