If I have two different projects, is it possible to have a different set of priorities (blocker, critical, high, normal, low  in one - Critical, high, normal in the other?   Or are the properties defined for all projects and not configurable between them?

Hello,

Priority schemes on a project level are available from Jira 7.6 and higher:

Yes, please use 'Priority Schemes'. But, it depends on your JIRA version. Older versions do not have this option.
