Hello !
To be more specific, I have an Issue Type in which I need to have a specific field to be neither visible nor editable until a certain status of the workflow, from which I do need this field to be visible AND editable.
I have tried to make the field appears only on a screen dedicated to a transition (not in the default or edit issue screen) and it did make the field visible and editable at this point, but after the transition the field was hidden again...
A second option would be to have the possibility to say that only specific users could modify this specific field (in that case it doesn't bother me if the field is always visible) .
Any ideas / solutions to help me ?

Ooof, I totally overcomplicated my answer and took too long in doing so. @Rafał Chomik is spot-on, so I'm deleting my nonsense and going to bed!

You need to add custom field to edit and view screens for Issue Type, then in layout settings for this Issue Type you need to move this field to 'Hide when empty' section.
After this you need to add this field to transition screen on transition that lead to specific status.
In results field should not be visible during issue creation, and right after that until it has a value.

You are doing this from Layout tab? (Project Settings > Issues > Layout).
There should not be any limitations.

Yes indeed but I can't drag this field, or any other fields in an other tab than the main one.
