According to "Configuring a project's email address" it is possible to set a specific outgoing email address for a certain project.
I found this option in the project summary. It says:
Notifications for this project will be sent from this email address. This might not be possible with some public email services. In this case, the mail server default will be used.
Unfortunately after the change no notifications are sent at all.
Our default SMTP server works with "jira@ourcompany.de". The outgoing address I wanted to use for this ServiceDesk project was"helpdesk@ourcompany.de".
Any ideas?

You may be running up against an anti-spoofing rule in the mail exchanger.
Your company's mail system will likely need to create the mailbox associated with the specified account, or at least alias the new email address to the jira@company.de account.
A possible alternative would be to use '+' email addresses, if your system supports that standard. With an email address such as jira+helpdesk@company.de, inbound mail and bounces would deliver to jira@company.de. The information to the right of the plus sign can be used to set mail rules for inbound mail. Some email systems use other characters, such as period ('.') to allow similar functionality

the account "helpdesk@ourcompany.de" is set up. It is actually the address for customers to raise requests. the email incoming works fine. However, the replies and notifications are always sent from the default address "jira@ourcompany.de", which is set as the SMTP Server.
I don't really understand why Jira offers "configuring a projects's email address" if it results in notifications not being sent at all.
