We have two teams that will be transitioning from other project management software to JIRA in the coming months. There will be one project with two Boards, one for each team. Each team has a unique set of Issue Types and therefore a unique Workflow for said Issue Types.
I had hoped to make the learning curve a bit easier by limiting the Issues that are available at the Create Issue Screen. If someone on Team A opens up Team A's Board, I wanted to be able to only show the Issue Types that are part of Team A's Workflow.
Is that something that can be configured or is it only possible to show all Issue Types available in a Project?

Yes, this can be achieved. All you have to do is change the filter used by each board to only include the issue types that each team is using.

Yes, each board has its own filter, and as a board admin or project admin you can change that. Have a look at Configure filters for more information.
No, you cannot limit the issues available based on the board, if you want to do that you would have to have different projects for the teams.
