We would like to synch our own Jira Service Desk with the Jira Service Desk being used from a customer.
Once a customer creates a ticket in their Jira Service Desk it should trigger the creation of the same ticket in our own Jira Service Desk.
Is this doable or do we have to implement a workaround by triggering a ticket creation from an icoming email?

You'll need add-ons for this. The ones I'm familiar with allow you to synchronise projects across two (or more) Jira servers, with varying amounts of mapping and interactions.
The ones I've used are K15t's Backbone and iDalko's Exalate, which are both good at what they do - there are some others in the marketplace that might be worth a look too.

You can also use the single sided connection based subscription, where only one of both sides pay for a connection.
