It's weird because we got no emails or notifications, we logged in today to find we don't have a subscription running for Jira/Atlassian instance. And when we try and pick an instance that's gone too. It only allows us to create a new instance. Any help would be appreciated it!

Jira could subscriptions will expire at the end of the month's billing cycle, or if using a Annual Subscription at the end of the yearly subscription.
There is not a calendar for the billing cycle, but In the applications when logged in as a Site Admin and you will be able to see an overview of the billing cycle under Site administration >> SUBSCRIPTIONS & BILLING >>
