when you are saying "Jira Sheets", are you perhaps referring to JXL for Jira?
If that's the case - the creator of a sheet is indeed stored with the sheet, but not surfaced via the UI yet. That's something we plan doing in the future, although I don't have a definite timeline yet. This being said, there are ways to access this information already; it's just less convenient than it ultimately will be.

Hi Hannes - the left nav in our Jira Cloud instance is "Sheets" (screenshot for reference).
Doing a quick search on "jxl for jira", this does appear to be the same thing. Now sure why they'd have two names for it...that's mildly confusing.
