Is there a way to view a report showing the last comment/commentor for opened issues?

I'm new to this and I have to do a daily status call on different type of projects and get the last comments/commentor's updates.  Is there an easy way to pull that information down into a report? That would save me tons of time and headache.

I don't think there is any way out-of-box to get the last comment. You can get that using ScriptRunner or Power scripts add-on as mentioned here.
