No, I don't want to pay for JXL. I just want to quickly change a bunch of issues to a different release. I'd rather not have to click within every screen.

The short answer is: no, and maybe.
"No...and...": There isn't any grid-like edit for out-of-the-box software Jira projects. I believe there is such a feature for the business projects, and hopefully it will be added to other project types one day. "Maybe": Depending upon what you want to change, you could use bulk update operations from advanced search or export/edit/re-import issues from a spreadsheet. Neither of those approaches lends itself to what I believe you are describing.
"Maybe 2.0": If you regularly make the same type of change to issues, automation for Jira may interest you. For example, adding templated content to fields based upon certain events.
