I have an issue collector set up and I was wondering if it's possible to have an option for the status (if you didn't want the issue to be set in the beginning of the workflow). Thanks!

You can setup a Workflow that has a a different status for the "Create" issue event. You can then associate this particular workflow to the issue type you have selected in your Issue Collector.
