I've setup an issue collector and apparently NAME and EMAIL are default fields that can't be removed (if they can that would be great). If I enter info into them I do not see the information in the issue that is created. I'd like them to be added into the issue that is created. Ideally it would be in the field tab along the side, but I don't see a NAME or EMAIL field there so I don't know how it would be added.

You are correct to say that both fields Name and email cannot be removed on JIRA Cloud, but only on JIRA Server.
About your request, both fields drop their content by default in the description field of the Issue. Just make sure the create issue screen on JIRA is added with the description field and there is nothing blocking you from fill the description field in the JIRA UI.
Additionally, we have a feature request opened to implement the ability to Remove/edit both fields in the issue navigator:
- Modify "name" and "email" fields from the Issue collector
